A la parrilla is the way we do it. It's how we get that seriously juicy chicken, and why the grill has always been at the heart of Pollo Pepe. The recipe came from Guadalajara in 1979 and has not needed updating since.

At Pollo Pepe, the grill is not just another station. The person in charge of our pollo goes through our own Maestro Parrillero training, learning how to handle the chicken, manage the heat and watch every stage of the cook. Every chicken is cooked with its internal temperature carefully checked while the Maestro Parrillero manages the heat of the grill to get the finish we're looking for: properly cooked inside, golden on the outside and seriously juicy where it counts.
We keep the chicken whole until your order comes in. Then it gets its final moment on the grill, we cut it, and it heads out hot. It's one more step, but we'd rather do that than rush the part you're about to eat.

The chicken itself is savory, not hot. You decide the heat with the salsas and the chiles toreados on the side.
Our packages start at one whole chicken, eight pieces. If you want less, the combos come with two or four pieces, a side and a drink.
We do — with catering packages built for groups, plus jumbo sides, salsas and tortillas to make serving easy. You invite the people, we'll bring the pollo.
